A yummy dessert

Over the long weekend, all of us did things that make us happy.


Hubby slept.

Riley watched over the neighborhood from her perch.

And I baked.  I baked Coffee Toffee Bars.

Although I love to sleep {don't get me wrong!}, I am totally thrilled that I decided to bake instead.  I had yet to make this recipe, but I love trying new dishes and new desserts!  Lately, I have been loving the Pioneer Woman {as I am sure so many of you do.  I don't know why it took me so long to hop on that bandwagon.}  So you may notice that my more recent recipes can be attributed to her.

But that's okay.  When it comes to the kitchen, she knows her stuff.

And this one is no different.  It came together really quickly, actually.
{yum...}  And before I knew it, it was in the oven.
And the recipe turned out great.
This is a super simple, really decadent dessert.  Eat in small quantities.  Or large quantities, if you're like me.

Coffee Toffee Bars {from Pioneer Woman and Tasty Kitchen}
  • 1 cup Soft Butter Or Margarine
  • 1 cup Brown Sugar
  • 1 teaspoon Almond Extract
  • 1 Tablespoon Instant Coffee (Up to 2 Tablespoons for more flavor)
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 2-2½ cups Flour (approximately)
  • 1 cup Chocolate Chips (Up To 2 Cups!)
Cream together the butter and brown sugar.  Blend in the almond extract, instant coffee, baking powder and salt.  Add enough flour to make a stiff dough {Mine came to about 2.25 cups}.  Press into a well-greased 9×13 pan (or a jellyroll pan if you’re doubling it) and sprinkle chocolate chips on top.

Bake at 350 F for 20 to 25 minutes.

This only takes about 30 minutes from start to finish - so it's quick to toss together!  And tips for you: cut these into small pieces.  They are super rich, you only need a small square to be satisfied!  {Granted, small is no longer applicable if you eat five at once.}

Oh man. Coffee and toffee are pretty much the be all and end all to me. I love them both so so much. However, I cannot make these things if I have nowhere to take them. This would literally last about 3/4 of a day in my house. For shame!

These are quite the treat. I added closer to 2 T. of coffee though, and I had quite the shakes from the caffeine and sugar boost!
